Tamping is the act of compacting the coffee grounds within the filter basket, to remove the air, create an evenly dense coffee puck, and prepare the coffee for extraction. Forgoing tamping is usually detrimental, as the air voids in the coffee puck lead to uneven and poor extraction – however sometimes the act of locking the portafilter in will tamp the coffee against the dispersion screen, provided there is enough coffee in the basket to reach the screen.
